In the course of its history, humankind has diversified itself into a vast array of unique cultures. One of the strongest cultural touchstones that binds us all is that unquenchable quest for food. Cuisine is the most prominent part of another culture that anyone will experience, and living in the Great Melting Pot, Americans have taken and blended all the foods of the world. Los Angeles has taken the Aztec’s idea of guacamole and created twenty-dollar avocado toast. Chicago has taken Italy’s idea of pizza and made a swimming pool of cheese. The French brought mayonnaise to Manhattan and it stayed the same. Then in the fat-free craze of the late 20th Century, we became ashamed of the gelatinous goop. But we didn’t stop eating it, we just rebranded it, we plundered another culinary term to disguise our guilty pleasure.
